I've been using this mix to replace lettuce in my winter salads, and the Tatsoi and frilly endive give a nice peppery kick. Cut them young as suggested, and the variety of textures keeps things interesting.

The deep red beetroot leaves add such a nice color contrast to the salad bowl, and the mix stays tender even in cooler weather. I’ve been using it as my go-to lettuce substitute since the frost started.

I was pleasantly surprised by how well this mix germinated even in my chilly kitchen. The Red Russian Kale and Tatsoi leaves add nice texture to salads when lettuce gets tough in winter.
