These leaves are so much bigger and more wrinkled than standard tatsoi, they hold up perfectly in a quick stir-fry without turning to mush. I've been picking them for weeks now, even through some warm weather, and the plants just keep producing.

These seedlings shot up fast even when we had a surprise warm spell in early fall. The leaves are thick and hold up well in a hot stir-fry without turning to mush. Perfect for filling out a steamed greens side dish.

I tossed a handful of these big wrinkled leaves into my stir-fry last night and they wilted down perfectly without getting mushy. They've handled our hot afternoons and cool evenings without bolting, which is a nice bonus.
