Flageolet beans are common in France where they are picked before maturity and shelled. Dating back to the 1800s these bush beans must be shelled, but are harvested while young, crisp, firm and tender. Suitable for drying, freezing or eating fresh. Best picked as a white or pale green shelling bean. Popular in French cuisine where they are a delicacy of the bean world.

Ellie ★★★★★

These beans are wonderfully tender when picked young, just as described. I shelled a big batch for cassoulet and they held their shape perfectly without getting mushy.

Evelyn S. ★★★★★

I was thrilled with how quickly these bush beans germinated in my garden, and harvesting them young to shell was surprisingly satisfying. The texture is exactly what I hoped for—crisp and tender, just like the description says.

Eva ★★★★★

The beans came out perfectly tender and crisp after a quick boil—just like in the French markets. I loved that they’re harvested young so you get that firm texture without waiting for them to dry out. Definitely ordering more for next season.
